The newest competitor for Louisvillians’ dining dollars is set to open Monday 11/17. 8 Up Elevated Drinkery and Kitchen defines its location precisely, on the eighth floor of the Hilton Garden Inn, the newest addition to the downtown hotel market, on the corner of Fourth and Chestnut Sts.

8 Up, conceived and operated by the Concentrics Restaurant Group out of Atlanta, was planned to knock the socks off guests who come for drinks at the interior bar (which will have its own kitchen), or sit on the spacious glass-walled patio, hunkered around any of the several firepits, or to dine in the elegant dining room, managed by Len Stevens, who operated L&N Wine Bar & BIstro for many years.

The restaurant kitchen will be run by Executive Chef Russell Kook, who made a strong run on “Hell’s Kitchen” TV chef competition four years ago, and who will have two wood fired ovens to roast and grill upon at his new venue. 8 Up, is more than just the hotel’s restaurant, with an expansive and expandable dining room, a bar area with its own menu, and that 6500 square foot enclosed patio that is likely to draw crowds even in the chill of winter to look over the downtown scene from a new perspective above Fourth St.
