Beginning at 8 p.m. Saturday (or Derby Night; everyone knows what night that means), Proof on Main, 702 W. Main St.,  will host a Derby Night Celebration of dinner and dancing .

Executive chef Mike Wajda, will serve a  buffet style dinner featuring Derby specialties like fire-roasted fava bean with chickpea and lemon confit vinaigrette, Woodland Farm hog chop with broccoli and fermented honey glaze and KY Bison tenderloin with fingerling potato, trumpet mushrooms, charred onions and Worcestershire sauce, among other dishes. Desserts will include joconde sponge cake with rhubarb gelée and Chantilly cream, and Proof’s bartenders have devised a Tea for Two-lep, made with Angel’s Envy bourbon, Amaro Dell’Erborista, ginger syrup, earl grey tea, mint spring and lemon peel.

After dinner, guests are invited into The Speed of Light/Derby Night Celebration party, which will celebrate the future of The Speed Art Museum as well as the Kentucky Derby. There will be an open bar and a live DJ. Tickets for both dinner and the party are $195 per person ($125 for those who only want to attend the party).
