The wine dinners at Varanese, 2106 Frankfort Ave., give chef John Varanese and his crew a chance to branch out beyond the regular menu, and show the breadth of their kitchen skills.

The next such dinner is Tuesday, September 9, at 7 p.m., with National Wine Educator Thom Horsey on hand to comment on his wine pairings from the Spanish winemaker Torres.

The menu: First course– Grilled oyster with a warm pineapple, cilantro and lime relish, served with Torres Verdeo.

Second course– Grilled peaches over charred frisee and red Romaine lettuce, with grilled jalapeño vinaigrette. The wine will be Torres Table Viña Sol.

Third course– Char-roasted golden tomato gazpacho with langoustine, paired with Torres Coronas Tempranillo.

Fourth course– Oven-roasted pork loin stuffed with butternut squash and chorizo, paired with Torres Ibérico Tempranillo.

Fifth Course–grilled beef and lamb kabob, saffron rice with diced tomatoes and caramelized vegetables, served with Torres Salmos Priorat.

Sixth Course– Chocolate cake with ghost pepper ganache, blueberries and house-made marshmallow. The wine will be Torres Sangre de Toro Granacha.
