Wednesday, May 31, at 6:30 p.m.. Varanese, 2106 Frankfort Ave., will host a “Tour of Italy” wine dinner,” six courses paired with Italian varietal wines selected by Certified Sommelier Aaron Dawkins, who will be the guest speaker during the dinner.

The first course of the meal planned and executed by Chef Erik Abraham and his team will be sautéed middleneck clams and chorizo with artichoke hearts, paired with a Pieropan Suave Classico. The second course will feature a Tenuta di Arceno Chianti Classico to be enjoyed with chilled squid ink capellini pasta tossed with basil pesto and poached shrimp.

The third course will be a fresh mozzarella arancini, served with Feudi Rubrato Aglianco, followed by roasted eggplant puree with fire-roasted leg of lamb and veal sausage, paired with a Copertino DOCG,.

The main course will be braised oxtail bolognaise with house-made pasta, washed down with a Renato Ratti Marcenasco Barolo. Dessert will be chocolate dipped cannoli with dried cherry jam and pistachio gelato, served with Michele Chiarlo Barbera D’Asti.
